Number of invoice processors needed per buyer

Q. Any suggestions on how many AP invoice processors are needed per buyer? I work for a mid-sized children's hospital.
Staffing wouldn’t really depend on vendor because we assign vendors to the team by vendor so the work is distributed evenly among the team. Also, only 27% of our invoices are on POs.
